Loving getting to know you Emily! Here's my Banana bread. It's a winner!Banana and Raspberry breadThis is REALLY nice toasted in a toasted sandwich maker, have to get the outside crisp and then slather it with butter! I also halve the oil and put in one whole egg as well as an egg white, try it as per the recipe but feel free to change it about. Makes nice muffins too and you can freeze them.2 egg whites2 medium ripe bananas mashed¾ cup soft brown sugar¼ cup vegetable oil (I use olive and think it is too heavy which is why I do what I do with the egg)1 ½ cups plain flour1 tsp cinnamon1 ¼ tsp baking powder½ tsp bicarb of soda1 ¾ cups frozen raspberries2x little tubs of fruit like peaches or 2 fruits – they say WW but I use Goldburn Valley – drainedPreheat oven 160 oCGrease loaf tin (22cm x 12cm) & line w paper hanging it over the long sidesCombine egg white, banana, sugar & oil (egg) in a large bowl. Sift flour, cinnamon, baking powder & bicarb in to wet mix. Mix to combine then add raspberries & other fruit.Spoon mix into loaf tin & bake for 1hour 15mins or until skewer comes out clean. Stand loaf in tin for 5 mins then cool on wire rack. This doesn’t cut well when it is really warm.
